ABOUT THE ARTICHOKE (Cynara cardunculus)
The artichoke is a variety of thistle cultivated as food. The edible portion of the plant consists of the flower buds before the flowers come into bloom. If the plant is let go to seed — a brilliant, violet flower appears as the bud matures and opens up.
